Vegan Banana Coconut French Toast

  • 1 large ripe banana
  • 1/4 cup full fat coconut milk or as required
  • ΒΌ teaspoon Cinnamon powder
  • 3-4 small slices of whole meal bread
  • Oil for shallow frying


  • Mash the ripe banana in a bowl. Add coconut milk and cinnamon powder to it and whisk well until we get a smooth batter.
  • Remove the crust from the bread and cut into pieces of desired shape.
  • Dip each piece into the mixture to coat it well from both sides. Remove it quickly.
  • Heat oil in a frying pan and shallow fry the pieces for 1-2 minutes or until they turn golden brown on both sides.
  • Remove from the pan and serve immediately.
