Course: Breakfast / Dinner / Tiffin Box
Cuisine: Indian

Ingredients

  • 1 cup idli rice
  • 1/2 cup urad dal (split black gram)
  • 1 cup fresh spinach, washed and finely chopped
  • 1/2 cup grated carrots
  • 1/2 tsp cumin seeds
  • salt to taste

Method

  1. Wash the idli rice and urad dal separately under running water.
  2. Soak them in water for about 4-6 hours.
  3. Drain the water from the soaked rice and urad dal.
  4. Grind them separately to a smooth batter using minimal water. The urad dal batter should be fluffy.
  5. Mix both batters together in a large bowl and add salt. Allow it to ferment overnight or for at least 8 hours.
  6. While the batter is fermenting, steam or blanch the chopped spinach until it wilts.
  7. Blend the wilted spinach into a smooth puree.
  8. Once the batter is fermented, add the spinach puree, grated carrots, and cumin seeds. Mix well to ensure even distribution.
  9. If the batter is too thick, add a little water to achieve an idli batter consistency.
  10. Grease the idli plates with a drop of oil.
  11. Pour spoonfuls of the batter into each mold.
  12. Steam the idlis in a steamer for 10-12 minutes or until a toothpick comes out clean when inserted into the idlis.
  13. Allow the idlis to cool for a few minutes before removing them from the molds.
  14. Serve these nutritious Spinach Idlis with a side of coconut chutney.
