Wash the chicken thoroughly and cut it into small cubes. In a saucepan, add the chicken, water, a pinch of salt, and turmeric powder. Boil the chicken until fully cooked, then switch off the flame, drain the water, and set the chicken aside.
After soaking the rice for 10 minutes, drain the water. In a pressure cooker, add the soaked rice, ⅛ tsp turmeric powder, salt to taste, and 3.5 cups of water. Close the lid and cook on medium heat for 3-4 whistles. Set the cooked rice aside.
Place the boiled chicken pieces in a mixer or food processor and pulse for 2-3 seconds, ensuring it's not ground into a smooth paste.
In a thick-bottomed pan, heat ghee and add cumin seeds. Let them crackle before adding chopped green chilies and garlic. Stir quickly, then add the onions and sauté until golden brown.
Once the onions turn translucent, add the chopped tomatoes and cook until they become soft and mushy, and the raw smell disappears.
Add the minced chicken and a pinch of salt, mixing well. Cook on a low-medium flame for 5 minutes or until the chicken is fully cooked. Turn off the flame.
Open the pressure cooker and gently mix the cooked rice with the chicken, onion, and tomato mixture. Stir until everything is well combined.
Garnish with fresh coriander leaves and drizzle with a little ghee, if desired. Your Comforting Chicken & Rice Bowl for Kids is ready to serve!
