Preheat oven at 180 deg Celsius for 5 minutes.
Mix 2 tbsp olive oil, salt, 1 tsp black pepper powder and herbs.
Cut the loaf into slices and brush the slices with the olive oil mix.
Grill the slices for 7-10 minutes or till they are crisp.
Heat oil and saute garlic and onions.
Add the tomatoes and cook. Once done add all the vegetables in turn and cook till a bit soft.
Add all the seasoning. You can also add tomato puree if you like.
Spread the topping on top of the grilled bread and garnish with a sprig of coriander.
Serve on its own or with any dip of your choice.
