For the balls: Put all the grated vegetables into a mixing bowl. Add all the other ingredients and mix together to get a dough-like mixture. There's no need to add extra water because the water from vegetables will help bind it together.
Heat oil in a pan. Make small balls out of the vegetable dough; larger balls will not cook completely.
On a medium flame, deep fry the balls till brown. Drain on a napkin.
For the gravy: Heat oil in a wok. Add the garlic paste and ginger paste and fry for a couple of minutes till the raw smell disappears.
Add the onions and saute till light brown. Add all the sauces and seasonings.
Add the stock and boil. Add cornflour paste to get the desired consistency.
Add the fried balls to it and serve with noodles or fried rice.
