Mix all the vegetables and keep it separate from the coriander.
Heat the tawa and smear some ghee on it. When really hot, sprinkle some water on the tawa and add one scoop of dosa batter. Top with a handful of mixed vegetables and spread it in a circle like a regular dosa.
Sprinkle some ghee on top. When the bottom is well roasted, flip it and roast the other side.
