Mash the banana with a fork if it is ripe enough. Mine was still a little firm, so I pulsed it in a blender.
In a mixing bowl whisk the banana with the egg yolk till well combined.
Season with black pepper powder
Heat a pan and drizzle a little oil on it. Pour half the batter on the pan.
Cover and cook on a low to medium flame for 1-2 minutes.
Flip the omelette carefully and cook the other side as well.
Repeat with the remaining batter. Serve warm.
