Select good quality whole mung beans which are uniform in size and color.
Take the amount of mung beans you want to sprout in a plate.
Look for very small sized beans (which would generally not swell up on soaking or sprout there after) if any. Pick and clean the mung beans .
Now wash the beans in water thoroughly.
In a bowl take the mung beans. Add enough water (the water should be 1 inch above the mung beans) and cover it.
Soak the beans overnight. Next day the mung beans will swell .
Drain all the water from beans, wash the soaked beans once , drain.
Take a clean kitchen napkin or a cotton cloth and keep the soaked mung beans in the cloth.
Tighten the cloth. Sprinkle little water over the cloth so that it is becomes moist.
Keep it in a covered container for 1-2 days. Make sure the cover is not very tight.
After one day, you will see small sprouts and they will grow after 2 days.
The sprouted beans stay fresh in the fridge for upto 2 days.
