Melt butter in a non-stick pan. Add the grated carrot and chopped French beans and fry for a minute.
Add the cooked quinoa to the pan and stir fry for 1-2 minutes.
Add beaten egg yolk to the quinoa followed by freshly crushed black pepper.
Stir fry constantly for about 2 minutes so that the egg yolk gets scrambled and coats the quinoa grains.
Serve the egg yolk quinoa stir fry warm.
