Ingredients

  • 1/2 Cup sabudana (tapioca pearls)
  • 1 1/2 Cups water
  • 1/2 tsp cardamom powder

Instructions

  • Rinse the sabudana pearls under cold water until the water runs clear.
  • Place the rinsed sabudana in a bowl and add enough water to cover them completely. Let them soak for about 3-4 hours or overnight until they become soft and translucent.
  • Drain the soaked sabudana and set aside.
  • In a medium-sized saucepan, add 1 1/2 cups of water and bring it to a boil.
  • Once the water is boiling, add the drained sabudana to the pan.
  • Reduce the heat to medium-low and cook the sabudana, stirring occasionally to prevent sticking.
  • If using, sprinkle cardamom powder for flavor enhancement
  • You can also add a small amount of ghee at this stage for richness, if desired.
  •  Continue to cook the sabudana in the water, stirring occasionally, until the pearls become soft and transparent. This should take about 10-15 minutes.
  • If the porridge becomes too thick, you can add a bit more water to achieve your desired consistency.
  • Once the sabudana pearls are soft and the porridge is well-cooked, remove the pan from the heat.
  • Ladle the sabudana porridge into serving bowls.
  • Serve warm as a nutritious and satisfying dish without the use of milk.
