In a large pan, combine the sunflower seeds, the flax seeds and the almonds and toast over medium flame, until the flax seeds stop popping. Remove and set aside to cool.
Pour the oats into the pan and toast them over medium heat until light brown and nutty smelling.
Add the dates and the raisins into the oats, add the nut-seed mix as well. Mix to combine thoroughly and evenly.
Drizzle honey and add the vanilla. Mix until all the dry ingredients incorporate the honey evenly. The mixture should be still crumbly.
Turn off heat and sprinkle cocoa powder evenly over the oats, honey, dry fruit and nut-seed mixture, turn over to coat all the ingredients with cocoa.
Allow to cool, then store in airtight containers.
