To begin with, rinse the tofu block in fresh water well. Pat it dry using tissue paper or a clean kitchen towel.
You may grate the tofu, I have chopped it instead.
Heat oil in a pan or wok. Add onions to it and saute for 1-2 minutes. Next tip in tomato and green peas. Stir fry the veggies for a minute or so. I have used frozen green peas so they cook quickly. If using fresh green peas. Cover cook until the peas cook well.
Now add turmeric followed by chopped or scrambled tofu and mix well. Stir fry for another 1-2 minutes and cover cook for 2-3 minutes more.
Lastly add freshly crushed black pepper and garnish the tofu bhurji with finely chopped coriander.
Serve the delicious tofu bhurji with your preferred flat bread. I have served it with multi grain bread.
