Tofu and Cashew Mayonnaise Recipe
An Iron rich mayonnaise spread for breads and as dips
  • 1 package (firm) silken tofu (12.3 ounce package)
  • ½ cup cashew paste
  • 1 tsp lemon juice
  • 1 tsp mustard powder
  • Sea salt, to taste
  • Black pepper, to taste
  • 1 tsp sugar
  • ¼ th tsp wasabi paste
  1. Drain water from tofu and place it in the blender with cashew paste, lemon juice, mustard powder, salt and pepper.
  2. Blend at highest speed until light and creamy.
  3. Now add sugar and wasabi paste.
  4. Blend again and keep aside.
  5. You can serve it with some crackers or apply in sandwiches.
