Okra Rice

Okra rice is a simple yet flavorful rice dish where stir fried okra is sauteed with cooked rice to give a delicious and wholesome meal. This one pot meal goes well in lunch box with some curd or raita. Okra / bhindi / vendakkai contains potassium, vitamin B, vitamin C, folic acid and calcium. It is low in calories and has high dietary fiber content. Okra rice is a good choice for lactose intolerant people to get their daily dose of calcium.
INGREDIENTS
  • 2 cups cooked rice
  • 1 cup chopped okra
  • 1 onion sliced
  • 1 small tomato finely chopped
  • 2-3 cloves of garlic
  • 1 sprig curry leaves
  • ¼ teaspoon cumin seeds
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon raw mango powder
  • ½ teaspoon garam masala
  • 1 teaspoon red chili powder (adjust the quantity as per taste)
  • 2 tablespoons oil
  • Salt to taste
METHOD
  1. In a wok, heat oil. Add cumin seeds to it. Once the seeds crackle, add curry leaves and minced garlic. Stir fry for few seconds.
  2. Add sliced onions and saute for a minute. next add the chopped tomato and stir fry until they turn mushy.
  3. Now tip in the spice powders, salt and mix well. To this add the chopped okra and stir fry for a minute or two. Cover cook until the okra is soft.
  4. Now add the cooked rice and mix well with the okra masala. Take care not to break the rice while doing so.
  5. Cover cook for another 2-3 minutes on low flame. Put off the flame.
  6. This deliciously nutritious okra rice goes well with curd or raita and papadam.
